BEETS- THE VERSATILE ROOT
Beets or beet root as they are called locally, are champions of good health! Beta Vulgaris or Beets belong to the subfamily of Betoideae of the family of Amaranthaceae. Beets are native to the Mediterranean and can be steamed roasted, juiced or even eaten raw. They are easy to prep and can be added to just about any dish. Beets come in yellow color (called golden beet) and the purplish red variety ( the most common form). With their vibrant color, beets can liven up your juice, stews and salads.
The health benefits of beet root are many. They have vitamin C, folate, potassium iron and manganese. A cup of beets contains:
0.2 grams of fat, 2.2g of protein, 59 calories, 13g of carbohydrates, 3.8grams of fiber, 9.2g of sugars, 106mg of sodium, 442g of potassium
Regular consumption of beet helps to regulate blood sugars, engender feelings of fullness, helps lower blood cholesterol and encourage regular bowel movement. Their phytonutrient, betalains, helps the body fight off free radicals.

A FEW BEET RECIPES
SMOOTHIE…. Chop 1 small beet ( peeled),a Handful of waterleaf, parsley, ½ tsp of turmeric powder and ginger powder. Juice from 1 lemon . Add some ice and enjoy!!
BEET JUICE….3 medium carrots, I medium beet a small piece of ginger. Wash and chop carrot and ginger. Peel beet root and chop into small bits. Add all to a blender together with a cup of water. Blend , sieve and drink. Yummly tasty!
BEETS AND ANYTHING SALAD!
1 medium sized beet chopped and steamed
I tangerine peeled and deseeded
Handful of spinach
2 firm tomatoes chopped
2 boiled eggs sliced or 1 and a half cup of cooked shrimps
1 tsp sesame seed
Mix all ingredients together and coat with a 2 tsp of sesame oil/mayonnaise
Enjoy.
